Whats for Dinner? &…

 

Ladas!

We love this quick and easy enchilada dish!

My sister Donna,

the Clever Chef, as I like to call her, created this

wonderful, yummy, easy

enchilada recipe.

I made it for dinner and the leftovers are even better! 

Beef or chicken enchiladas!

Layer this dish.

(Like you do when you make a lasagna)

Cook the beef first, while preparing other ingredients!

Measurements are up to you.

I use a lot of corn

and black beans, love them!

Here is what you will need:

2 cans of yellow corn

2 cans black beans

2 cans pre-cut black olives

1 bag mixed Mexican cheese

1 bag of corn or flour tortillas

1 can LAS PALMAS enchilada sauce

(The secret ingredient!)

Here is how the layers go:)

1st layer: Corn Tortillas

2nd layer: Beef or chicken

3rd layer: Corn

4th layer : Black beans

5th layer:  Las Palmas Enchilada Sauce

6th layer: Black olives

7th layer : Mixed Mexican cheese

Repeat layers as desired!

Cover with foil

Oven at 350’ for 30 minutes

Pair it with a Caesar salad, YUMMY.

Its fun to make with your kids and they will love it!

    Your soft pink roses look so very pretty in those little white jars...I put blue hydrangeas in mine...a little different effect but pretty too.
    Don't you just love it when you can use something so simple and humble to create something beautiful? Your arrangements and photos are stunning as usual! Have a lovely rest of the week!

  18. Yummy, try it with Trader Joes frozen fire roasted corn instead of canned corn to kick it up a notch..... like Emerill would say haha.

  22. Hi Lu, made your enchiladas dish tonight it is in the oven right now smell's great. Had a few question about it. Did you use he Las Palmas medium green chilli sauce or the Las Palmas mild red sauce and did you chicken or beef? Tracy
