Simple tomato soup


This soup is so easy to make and it is delicious.
Make sure to buy the San Marzano peeled tomatoes,
my entire Italian family uses their delicious line of culinary goodies.

2 chopped onions
2 tbsp olive oil
1/2 tsp kosher salt
1 28 oz can San Marzano whole peeled tomatoes 
4 cups low sodium chicken broth
1tsp dried oregano 
1 cup croutons
Parmesan

In a large pot over medium heat add oil, onions and kosher salt.
Cook 4-6 minutes or until soft. Add can of peeled tomatoes with their
juices.  Add 4 cups of chicken broth and oregano. Simmer
10-15 minutes until it begins to thicken. Puree in blender,
top with croutons and parmesan. Donzo!

  1. Yum! My favorite soup at a little restaurant we like is a creamy tomato basil. Think I'll try your recipe with a touch of cream and some fresh basil added. Can't wait!
